What you'll need:
1 cup grape or cherry tomatoes, halved
8 oz fresh mozzarella, diced
2 tablespoons basil pesto (homemade or store-bought)
1/2 small onion, minced
1/2 cup fresh basil leaves, chopped
2 tablespoons balsamic glaze (store-bought or use the recipe in the notes)
What you'll do:
Combine tomatoes, avocado, mozzarella, onion, garlic, basil, salt, and pepper in a bowl. Top with pesto and olive oil then mix well to evenly coat in the dressing.
Drizzle with the balsamic glaze, if using.
Adjust seasoning with salt and pepper, if needed.
Serve the Caprese avocado salad immediately,
