What you’ll need:
4 TBSP chia seeds
2 TBSP Greek yogurt , or coconut yogurt (optional)
1/2 cup unsweetened almond milk, or coconut milk
Squeeze of lemon juice
1/2 cup fresh berries
1 Tbsp natural vanilla extract
1 Tbsp pure maple syrup, or raw honey
What to do:
In a median jar or medium bowl, stir all ingredients together until well combined.
Pour the mixture into an airtight container and refrigerate, covered for 3-5 hours (or overnight).
Spoon the pudding into a small bowl and top with fresh berries or other desired toppings like nuts, cacoa nibs or coconut flakes…and a pinch of sea salt!
